you are right, during phase transition period ,the temperature will
stay constant (in an isolated setup).
Use water/ice for 0°C, thiosulfate (AR) for 48°C, which will cover
your range.
You can try cheap digital thermometer too. Some of them come with sort
of zeroing and calibration (factory). Should be sufficient for color
photo. Alternatively, get a digital multimeter and Pt thermo probe.
Some inexpensive multimeters can measure temperature (with Pt100)
probe. Try Tandy or equivalent.
