Adobe Stock Photos a component of the Bridge not a plug-in or extension so there is no tested way to "remove it" It can be turned off, but not removed without removing the Bridge.
There may be DLL or other dependencies.

Your method may work but we have not tested it so I can not say what the side effects may be.
