Subject: raw to psd to jpeg

I'm working with my new PS CS2 and maybe I'm missing something. Shouldn't I be able to open a raw file, save as a psd, add labeling, open the psd at a later date and save as a jpeg? When I open the psd file that was created from raw, I have very few save as options.
