JPEG images can only be saved if the image has been converted to 8-bit rather than 16-bit. You will see an option along the bottom of Camera Raw where you can make that selection. Also, if you have opened the image in Photoshop and have added any adjustment layers, you will not be able to save the image as a JPEG. If you are going to the extra effort to take the raw images, it might be a better choice to save them as PSD images because that format will support 16-bit and layers. Only save as a JPEG when that format is really what you need because every time you save that file as a JPEG you will lose some of the quality.
