What Nikon model are you using? I don't know how iPhoto works. But the file format is just the format of the container. You don't actually edit the RAW file in Photoshop anyway. You edit the pixels that were stored in that file. So even in Photoshop when it says you have the RAW file open, it is really just telling you where the image came from because you cannot save it as a raw image, and any changes you make in Photoshop are never reflected in the original image.

Asking again. What Nikon model are you using?
