If you are primarily interested in the histogram, then working in 16 bits will reduce or eliminate the gaps.
If you are interested in the appearance of the final image, whether for print or screen, then 8 bits per channel out of the box will do wonderfully.
ProPhoto RGB has problems with 8 bit, and if you have decided to use that space as your working space in Photoshop, then you will see a visible benefit from working in 16 bit per channel.
