Hopefully someone with better data and understanding will jump in here, but in my limited experience converting in ACR into ProPhotoRGB with everything set to zero and using a linear curve will give you a pretty good idea of what the sensor is seeing for daylight illumination. If you want to see an approximation of the linear data, you can create a custom profile with the primaries of ProPhotoRGB and change the gamma to 1.0 and then convert in PS.
For tungsten illumination the blue data are far to the left in the RAW histogram as shown with DCRaw.
