I do both.
I set the saturation to 0 in Camera RAW so that I can see an approximation of the final result as I manipulate the CR controls. Then I set saturation back to 0, open it in Photoshop, and use the Channel Mixer. I have several actions set up that give me starting points for Channel Mixer layers for various types of photos.
