Phil, the "preview" is an embedded JPEG image which external
programs can use to give "full screen" previews of the raw
DNG file without having to decode it - any TIFF-aware
application can do this.
When you change the settings of the raw conversion in ACR
you may opt to update the embedded JPEG to echo the changes.
It has no effect on the conversion, or on subsequent
conversions, it's simply a convenience if you want to change
the thumbnail and preview of the DNG to match the current
settings so that external programs will see the change.
