Good question - I personally wouldn't have a strong preference for any option. The Default style would be fine, or your fourth option (no stroke, filled with the last solid color).
I don't think it would need to remember the last fill and stroke for the sole reason that the fill and stroke are easy to set at that point. In some complex pieces of art, I create styles that I'll use frequently and eyedropper them onto new objects as needed, so you can see the worst hurdle is removing the mesh - at least in the art I deal with. We're getting character art where individual characters may easily have a couple dozen gradient meshes.
The Offset path option is working, but I have to go through a few extra steps to remove the old gradient meshed object.
Ideally, I'd like to select all objects that I want to make red fill with no stroke, use some "Remove Mesh" command, Illustrator would remove the mesh leaving the paths in the same layering order, and then whatever fill and stroke options they were converted to, I could easily change them to what I want them to be.
