I convert to DNG from the memory card, and discard the original raws once I have verified that I have valid DNGs in 2 places.
But Peter Krogh ("The DAM Book") recommends converting to DNG later. I think this is to avoid repeated building of preview JPEGs while using ACR.
For me, the main reason to use a DNG-based workflow is to generate and hold metadata within the DNG itself, instead of in sidecar files or a database. Other reasons are useful, such as smaller file sizes, better archival prospects, "recover edges", etc.
